The early payment gateways were quite crude and utilitarian in the mid 1990s. Authorize.net was one of the first to work with developers in a meaningful way and this resulted in wide adoption in custom solutions and integration into popular shopping cart solutions. The typical online merchant would negotiate a relationship with a payment processor and usually acquire Authorize.net through the payment processor. On the other hand the online merchant would usually acquire an off the self shopping cart solution from a website developer. I can say from personal experience that problems of this sort were a drain of productive and patients.
when Authorize.net was acquired by Visa, like when any relatively small company is acquired by a very, very large company, Authorize.net became less then flexible and less then responsive to the growing needs of web based startups and mobile startups. It was a huge problem and few had any desire to really address this in great detail.

There are a number of foundational reasons Stripe became so attractive. I think it boils down to a few deceptively simple reasons:
The API is based around REST  which allows for predictable, resource-oriented URLs with HTTP with easy to understand error codes. The use of HTTP authentication and HTTP verb allow for cross platform compatibility and client-side web application. There are the ability to have rich and robust testing of applications without risking payment card charges by accident. The API also allows for programming flexibility that was not easily achieved or impossible with legacy systems. Mobile. Stripe was built with deep mobile integration with native APIs for iOS and Android. Legacy payment gateways did not move swiftly to create simple solutions or just repurposed overly bloated web based APIs. Thus many mobile startups gravitated to Stripe and that momentum is still in play.
Documentation. Stripe has a wrapper in just about any programming language with very thorough documentation. Every method and every field are thoroughly documented in non technical language.
Very high level interactions between the Stripe developer team and the programers and developers that use the Stripe. Many startup companies try to do this but in practice just create distractions for all involved. Stripe has been very successful in listening to the developer community and moving swiftly to create more valuable iterations of features.
The target group for Stripe would prefer not to have to deal with and negotiate with most payment processors. The market is so vast that I believe it can not only support all of these competing systems but perhaps a dozen more.

I have to say that one can not discount the vital energy and motivation of the force of nature called Patrick Collison and the amazing team he has built.
